Easy homemade Granola Recipe

Homemade Granola


We love granola at our house so I started looking for an easy granola recipe.  I found several that I liked but tweeked them to my taste.  Here is what I came up with:

3 cups old fashioned oats
1 cup nuts(your choice but we are partial to walnuts and pecans)
1/2 cup unsweetened coconut
1/4 cup sunflower seeds
1/2 cup butter
1/2 cup honey or 1/2 cup sugar in the raw
1/2 cup of wheat germ
1/2 cup raisins or craisins
1/2 cup chopped dates

Melt butter and add honey.  Add oats, wheat germ, sunflower seeds, nuts and coconut into a large bowl. Mix all together then add melted butter and honey. Stir together then pour onto a greased pan.

Bake at 250 for 40-45 minutes stirring every 15 minutes until golden brown.  Let oat/nut mixture cool then add raisins, craisins, and dates. Keep in a sealed container.  Use within 3 weeks.  Perfect with milk for cereal or to eat with yogurt.

Lisa's Low Carb Cheesecake

Lisa’s Low Carb Cheesecake 



4- 8oz. pkgs. Cream Cheese
1 ½ cup Splenda
1 tsp. vanilla
4 eggs
1 heaping  Tblsp. Of flour
3/4 cup finely chopped nuts—your choice—pecans, almonds or walnuts 



Mix all ingredients except nuts in a mixer—do not over mix.
Spray a 10 inch springform pan with Pam or other cooking spray.
Pour finely chopped nuts into pan and shake to cover entire bottom and half way up the sides of the pan.  Then pour cheesecake mix into pan.  Tap to get air bubbles out and bake for 55-60 minutes on 350 degrees. Turn off oven and crack door (leave cheesecake in oven) until cool. Refrigerate. Serve with fresh berries and lite whipped topping.
  No one could feel deprived eating this!

Easy Pumpkin Muffins


Here is a recipe I have been making for my pumpkin loving family for years:

Easy pumpkin Muffins

1 box yellow or spice cake mix
1  15oz. can pumpkin
2 eggs
2 teaspoons Pumpkin Pie Spice
1/4 cup pecans (optional)
Sugar in the raw

Mix cake mix, pumpkin, eggs, spices and pecans together.  Scoop into cupcake liners ( mix does not raise much so fill liners up), sprinkle Sugar in the Raw on top and bake at 350 degrees for15 -20 minutes or until toothpick comes out clean.  Makes 15 muffins.

Bridal Shower Cupcake Dress






  My Bridal Shower Dress cake is so easy anyone can make it!  The hardest part was covering the board with the foil paper!  Just make you favorite cupcake and ice the tops flat.  You can use a piping bag and large star tip or just ice with a spatula-it will still turn out great!   I just played around until I liked the shape of the dress then put a dab of icing on the bottom of the outer edge cupcakes to "glue them to the board".  I cut a piece of wired ribbon for the sash and hot glued a silk sunflower onto it.  Easy peasy right? Everyone was impressed with it and it couldn't have been easier.  Pssst!  I will let you in on my secret--clear edible glitter or Fairy dust as I like to call it!  It gives the cupcakes a little extra sparkle! And Sparkle is always good, right?
